Rachel Hicks and Andy Parsons founded Sky Wave after years of travel failed to turn up a gin that matched what they wanted to drink, so they built a distillery of their own at Bicester Motion, the former RAF station now given over to historic motoring. Their Signature London Dry draws mineral water from the Blenheim Palace estate and combines it with Oxfordshire rhubarb, apples and foraged blackberries alongside botanicals shipped in from Madagascar and Morocco. The recipe was later named World's Best Contemporary London Dry Gin at the World Gin Awards and holds Master status at the Gin Masters. Visitors can book a guided distillery tour with tasting, a cocktail masterclass, or a seat at the Master Distiller's Reserve session, and the on-site shop opens on weekday mornings. A bar opens Friday and Saturday evenings.
