The Higginson family founded the shop on Grange's main street in 1983 and built it into one of the north's reference butchers; Mark Porter, its long-serving general manager, owns it now — the succession that keeps a shop's standards when a family line ends, told here as it happened. The counter belongs to the Q Guild, the selective club of Britain's better butchers, and the pies leave in volumes that suggest the seaside town knows exactly what it has.
