The Underground Bakery on Boroughgate was founded in April 2022 by Marcus Fisk and Ash Lees, who began baking as a small wholesale operation in the basement of Lees's house before opening this shop. The bakery uses a sourdough starter reported to be around thirty years old to produce daily loaves of sourdough, wholemeal and rye bread alongside laminated pastries including croissants, pain au chocolat, almond croissants and Danish pastries. Sandwiches, seasonal specials and specialty coffee are also served, with a small counter for eating in or taking away. The shop sits on Boroughgate in the centre of Otley, a short walk from the market square, and has become known locally for selling out most mornings before its stated closing time. It trades seven days a week, opening at 8am and running until either 3pm or whenever the day's bake is gone, whichever comes first.
