Stephen Millar opened his butcher's shop in Irvinestown eighteen years ago as a basic counter selling raw meat, sausages and burgers, having grown up on a beef farm in Newtownstewart before training in butchery at Portadown College. In 2022 he moved the business across Main Street into the town's former Ulster Bank building, converting the old banking hall and vault into a retail counter after stripping out the safes. The shop now dry-ages its own beef and stocks heat-to-eat meals, breakfast rolls from 8.30am and hot dinners from late morning, alongside local bakery goods and Ballylisk cheese. Millar competed for Team Ireland at the World Butchers' Challenge in 2019 and has since won several Great Taste Awards for his steaks and burgers. The shop trades from this single Irvinestown premises and does not supply other outlets.
