Y Talbot faces the market square in Tregaron, a coaching inn that once watered the drovers walking cattle and geese over the hills toward the markets of England. It is run by the head chef Dafydd Watkin, who trained under Marco Pierre White, and his wife Tracy, and was named AA Inn of the Year for Wales in 2024. Thirteen bedrooms, from simple singles to suites with baths, sit above a restaurant built around Cardigan Bay fish, Welsh beef and vegetables from nearby farms, with vegetarian and vegan dishes written into every menu. The bar keeps cask ales and ciders under a CAMRA five-star cellar rating, and three of the bedrooms take dogs. Weddings and functions run out of a separate space at the back of the building, leaving the square-facing bar as the working heart of the inn.
