Vickie Anderson and Ian Tomlinson opened the shop in 2006 in a Grade II listed former dairy in Woolton village — a building that has merely returned to its original food group — and have run it as a single-site independent ever since. The counter does the daily trade; the Cheese School does the evangelising, with tasting evenings running through the summer of 2026 at a wine bar in town. Closed Tuesdays and Sundays, which is the honest rhythm of a shop where the owners still cut the cheese themselves.
