Marty McAdam trained in Michelin kitchens before coming back to open The Street Kitchen in Enniskillen in 2021 — a daytime room on Paget Lane that turns out modern Irish cooking with a street-food looseness and a stated eye on waste and local sourcing. By day it is walk-in; on Saturday nights it becomes a booked-out dinner, the chef cooking a proper menu to a full room. It is the story of a lot of good small-town restaurants now: a chef with city training who would rather cook for the place they are from. Enniskillen is the better for the choice.
