Tom Grierson runs Grierson Bros on King Street in Castle Douglas, the fourth generation of his family to work behind this counter, with old photographs in the shop showing his great-grandfather delivering meat by horse and trap. Beef comes from Dumfries market and is hung on the premises for 21 days before cutting, while lamb is sourced from Castle Douglas market itself. The shop makes its own pies, puddings and sausages on site and cures whole pigs into bacon rather than buying it in. Grierson has been recognised at the Scottish Craft Butcher Training Awards for mentoring apprentices. The business sits among the long-established butchers that give Castle Douglas its self-declared title of Scotland's Food Town.
