Steve Conway opened Lambert's at 5 Cheyne Lane, Stamford, in February 2016, after five years as executive head chef at Barnsdale Lodge in Rutland, bringing that kitchen background to a shop that combines a deli counter with a sit-down café. The menu runs from a straightforward coffee and cake through to brunch and a full lunch, with a small bar for those staying into the evening, and the deli side sells the same seasonal, locally sourced ingredients used in the kitchen. Conway and his wife Sally run the business together, and the layout lets customers browse deli shelves before or after eating, rather than treating the two sides as separate businesses. It sits on a quieter lane just off Stamford's main shopping streets, drawing a mix of regulars doing a food shop and visitors stopping between the town's independent shops.
