Blomst Bakery opened in February 2024 on Hartnup Street in Maidstone, run by Mia Dahl, who grew up in the town as the daughter of Danish parents Charlotte and Jesper. She left her A-levels in 2017 to train at a culinary school in Copenhagen, then spent two years at Grain & Hearth bakery in Whitstable before signing the lease on the Maidstone unit in late 2023. The name means 'flower' in Danish. The bakery makes vegan sourdough country loaves and rye, alongside pastries and own-recipe cakes, with gluten-free options available; Dahl is herself gluten intolerant. It trades Thursday to Saturday, 8am to 3pm, and Sunday, 9am to 2pm, or until stock sells out, from a small unit next to a car repair garage rather than a shopfront on the main high street. The bakery supplies bread to a handful of local cafés as well as selling from its own counter, and operates as a single independent site with no other branches.
