Corkage began as a pop-up on Walcot Street in December 2015, run by Richard Knighting, formerly of Mirabelle in London, and Marty Grant, who came from touring musical theatre. It had no fixed menu and no wine list: diners simply asked what was open that night. When the Walcot Street site closed, the pair moved to 5 Chapel Row, adding a covered, heated terrace over what had been a courtyard garden. The current format keeps the original instinct for pairing small plates with wine chosen by the glass or bottle from a list built around growers rather than big-name labels. In 2025 the International Wine Challenge named its list Restaurant Wine List of the Year. It is dog-friendly, closed on Sundays, and does not open for lunch on Mondays or Tuesdays.
