John Coxford took over an existing meat shop on Red Lion Street in the 1970s and ran the business, together with Aylsham's livestock market, for some 46 years until his death in 2021. Current proprietors Johnny Payne and Jason Gibbons, both former pupils at Aylsham High School who started behind the counter as teenagers, took over in 2014 and now trade from Market Place. Beef comes from H G Blake in East Anglia, pork from Tim Allen in South Creake, and free-range poultry from Weddel Swift in Norwich. Alongside standard cuts, the shop makes a puff-pastry pinwheel filled with pork sausage meat, rosemary and garlic. Packaging has moved to recyclable brown paper bags and compostable trays, delivery vans have been dropped, and staff talk customers through provenance and animal welfare when asked.
