Luke Underdown founded Garage Coffee Roasters in 2015, converting a garage in the village of Hoath, outside Canterbury, into a small-batch roastery. The Whitstable shop began as a pop-up in 2018 and became permanent the following January, taking over premises on Oxford Street previously occupied by Burgate Coffee House. Beans are roasted in small batches at the Hoath site and served here as espresso, filter and single-origin pour-overs, alongside cake and simple lunches. The room is compact, with a handful of tables and a brew bar where staff talk customers through the day's origins. Locals treat it as a working coffee shop rather than a showpiece, dropping in before the school run or between errands on Whitstable's high street. Decaf is made in-house using the same equipment as the main roasts.
