Catherine Butler runs the Swansea Market stall her family has traded from since 1878, taking over from her father Hugh Phillips and continuing a line of butchers now in its fifth generation. The business still slaughters and processes its own meat through a family-run abattoir, and its Welsh beef and lamb carry PGI traceability status. Butler's faggots are made to a recipe passed down from her grandmother. In 2017 she launched a national delivery website alongside the market stall, shipping meat packed in wool wadding instead of the polystyrene common elsewhere in the trade.
