Stuart and Sarah Wilson started Lost Sheep Coffee in 2012 with a three-wheeled coffee van outside Canterbury bus station, after a year of travelling introduced them to Australian-style speciality coffee. The van gave way to a permanent pod on St George's Lane in 2014, rebuilt in 2017 as a converted shipping container that still serves the same spot opposite the bus station today. Beans are roasted at the company's own roastery in Whitstable and sold through the Canterbury pod alongside a short food menu. The pod keeps the Australian-leaned approach to coffee that first brought Lost Sheep to the city.
