Padstow Distilling

Padstow Distilling was founded in 2019 by David McWilliam, who set out to distil gin using barley grown a mile away at Tregirls Farm and botanicals foraged from the cliffs and coastline around the town. The shop and bar on Duke Street sell the full range of spirits, while tours and tastings run from the production site at South Quay, where visitors can watch the stills at work. Water is drawn from a local aquifer and recipes lean on ingredients gathered directly from the Padstow coast rather than bought in. The business remains independently owned and run by its founder, distinct from the area's larger drinks producers, with bottles sold from the Duke Street premises and through stockists across Cornwall.
