Fulford buys direct from inshore day-boat fishermen working the Cornish coast with handlines and static nets, so fish reaches Cheltenham within a day of landing. Techniques rotate between salt-baking, barbecuing over charcoal and sous vide, depending on the catch. Fulford has spoken about choosing sustainable species deliberately, aiming to keep pressure off overfished stocks rather than defaulting to whatever sells easiest. The dining room seats a modest number of covers across two sittings, Wednesday to Saturday, with lunch from noon and dinner from six, giving the kitchen room to cook each plate to order rather than batch through covers.
