Saunderson's has traded from 40 Leven Street in Tollcross since 1958, when shop manager Jack Saunderson bought the business from its previous owner, W.G. Adams. Three generations of the Saunderson family currently work behind the counter, cutting and preparing locally sourced meat for the surrounding streets. The shop marked its 67th year of continuous trading in 2025, a run that has kept it a family business through changes common to independent butchers over that period. Saunderson's offers the range typical of a working high-street butcher: beef, lamb, pork and poultry cut to order, alongside home-made sausages and other prepared items, plus a click-and-deliver service for local orders. It remains a single shop rather than a chain, trading through conditions that have closed many small Edinburgh butchers. Opening hours run Monday, Tuesday, Thursday and Friday eight to half five, Wednesday and Saturday mornings only, closed Sunday.
