Tom Oxford and Oliver Coysh started baking traybakes in Exeter in 2011, grew a wholesale trade that now supplies independent cafés across the country, and wrote two one-pan baking books along the way — Bake It. Slice It. Eat It. in 2022 and Bake It Easy in 2025, both for Quadrille. In January 2026 they handed their Queen Street café of fifteen years to the independent pizzeria Portal Pizza — same coffee, their cakes still on the counter — and committed, in their own words, to doing one thing well: the bakehouse at Marsh Barton, next-day cake by post, and the trade boxes that put their brownies on other people's counters.
