The Jolly Sandwich Bar occupies a corner unit on Darling Street in the oldest part of Enniskillen, close to the Buttermarket courtyard. Carina Johnston runs the café today, continuing a business her mother Hazel Johnston built up over more than fifteen years before her death in 2022, itself following her own parents' earlier catering work. The kitchen turns out cooked breakfasts, brunch plates and afternoon traybakes made from family recipes, including a raspberry and white chocolate scone that regulars order by name. Seating is limited to a handful of tables, so queues form at lunchtime for sandwiches cut to order from the counter. The café keeps no branches elsewhere, trading only from this one Darling Street address. It opens Tuesday to Saturday for breakfast and lunch and closes on Sundays and Mondays, when the ovens are given a rest.
