Tim Siadatan and Jordan Frieda opened Trullo on St Paul's Road at Highbury Corner in June 2010, serving an Italian menu that changes daily according to what is in season. Pasta is rolled by hand minutes before service, and a charcoal grill anchors the kitchen for cooking fish and meat over burning coals. The signature pappardelle comes with a beef shin ragu simmered for eight hours. The same stripped-back approach to Italian cooking later shaped Padella, the fresh pasta restaurant Siadatan and Frieda also set up. Trullo still serves St Paul's Road from the same corner site it opened on, working from a menu that is rewritten daily rather than fixed to a set rotation.
