Cardiff Distillery

Cardiff Distillery occupies a former coach house at 73 Cathedral Road in Pontcanna, where founders Paul and Julie Miller established the business in 2019 alongside head distiller Ben Carmichael. The single site houses a working still, a bar and a wood-fired pizza oven, and runs gin schools several times a week in which visitors choose their own botanicals, operate the still and bottle and label the finished spirit. Cocktail masterclasses, gin and rum tasting clubs and a small bottle shop selling the distillery's own gins run alongside the production side of the business. The team previously distilled from a smaller unit before relocating to the current Cathedral Road building to concentrate solely on distilling, and it operates from this one Pontcanna address only.
