Sat Bains, with his wife Amanda, has run his restaurant on Lenton Lane in Nottingham for over two decades — the first restaurant in the city to win a Michelin star, in 2003, and a holder of two since 2011. It is an owner-run restaurant with rooms and a kitchen garden, cooking a tasting menu that has made Nottingham a genuine destination for serious food, tucked improbably between the ring road and the Trent. This is among the best cooking in the country, done by the chef whose name is over the door. Book far ahead, stay the night, and give it an evening.
