The Waterside Bistro sits on the River Tyne in Haddington, run by James Findlay, whose father Jim first opened the business in 1982. The Findlay family returned to ownership in June 2017, restoring a menu built around seasonal Scottish produce. Head chef Jamie Hamilton changes the menu each quarter, mixing bistro classics with lighter plates and daily specials, alongside a children's menu and a full dessert list made in house. Tables along the riverside windows look directly onto the water, and the bar stocks a compact wine and cocktail list to match. The dining room keeps close to its original footprint, and the atmosphere stays informal rather than formal, with sharing plates alongside the main courses. It remains one of the few family-run bistros left on Haddington's Waterside stretch.
