Maxwell Colonna-Dashwood won the UK Barista Championship three times — 2012, 2014 and 2015 — carried it twice to the world finals, and wrote a book on water chemistry with an MIT-trained chemist; the shop he and Lesley opened on Chapel Row in 2009 is where all of that gets poured. Single origins and rotating microlots rather than a house blend, roasted by their own Colonna roastery since 2015; one 2016 reckoning named it the best coffee shop in Europe, and it remains the reference point in Bath. A London sibling opened in 2023 — the flagship stayed home.
