Bridgeen Barbour and Mark Ashbridge opened Established on Hill Street, in the Cathedral Quarter, in December 2013 — an early and serious entry in Belfast's speciality-coffee scene, built into a corner site with a long communal table and an open bar. They put a training and education space in alongside the café, which tells you how they think about coffee: as a craft to be taught, not just poured. The kitchen does its own baking and brunch through to mid-afternoon. More than a decade on, with the city's coffee culture much bigger than it was, Established is still one of the rooms that set the standard for it.
