Trading hours are limited and clearly signalled: closed Monday and Tuesday, open Wednesday to Friday mornings into afternoon, and Saturday until mid-afternoon. Kvasa's approach favours slow fermentation and a narrow, changing range over a large standing menu, applying the same sourdough discipline to its vegan lines as to everything else it bakes.
