Zephir Thomas and Sol Lee opened Pelicano on Sydney Street in 2014, roasting their own beans for a cafe that has become a fixture of North Laine. The original shop keeps two floors of seating plus a back garden and dog-friendly front terrace, serving single-origin coffee alongside homemade cakes and pastries. Pelicano has since added roasting capacity on Preston Street and opened further sites at Circus Parade, Lewes Road and The Level, but Sydney Street remains the flagship. Staff pull espresso from beans roasted within days of arrival, working directly with growers rather than through auction lots. The space suits both a quick flat white and a slower morning with a laptop, open from 8am daily.
