Edie's occupies a corner site on Beach Road in Carlyon Bay, opened in 2017 by chef Nigel Brown after an international career that took him away from his native Cornwall and back again. His wife Kelly runs the front of house, having previously worked at Raymond Blanc's Belmond Le Manoir, and their daughter Edie, whose name the restaurant carries, also works there. The kitchen builds its menu around seasonal, locally sourced produce rather than a fixed repertoire, changing dishes as suppliers' availability shifts through the year. The dining room reads as a neighbourhood bistro rather than a formal restaurant, with service pitched to be warm without being stiff. Both the Michelin Guide and the Good Food Guide have listed it since opening. It sits a short walk from the beach at Carlyon Bay.
