Paysanne was opened in 1988 by Bob and Barbara Ross, whose devotion to provincial French cooking shaped a menu built on fish and seafood landed along the North Wales coast. Their son Cai Ross now runs the dining room on Station Road in Deganwy, continuing a repertoire of classic French country dishes rather than chasing trends. Cai has since written a cookbook on North Wales fish and seafood, drawing on the same local suppliers the restaurant has always used. Service runs Wednesday to Saturday evenings and Sunday lunchtimes, with tables limited to small parties so the kitchen can work from fresh deliveries rather than large-scale prep. The restaurant is listed in the Harden's guide. Wine is chosen to match the food rather than dominate it, in keeping with the founders' original approach to provincial French cuisine.
