The kitchen sources meat from seven separate suppliers, favouring traceability and consistent quality over the cheapest quote, and dishes lean on slow cooking rather than quick turnaround. Fernandez has said he would rather hold a fair price than shrink portions to protect margins, a stance that shapes a menu built around generous, unfussy plates drawing on his own mixed heritage. Service runs six days a week, closed only on Mondays.
