John and Lorna Bruce opened The Bean Shop at 67 George Street in Perth in 2003, installing a five-kilogram Probat roaster to roast coffee for the shop themselves. Beans are still roasted to order in small batches, so what reaches the counter has typically been roasted within days rather than weeks. John oversees the green coffee buying and wholesale side of the business, sourcing lots that get cupped and evaluated before a batch goes into production. The shop trades under the line Scotland's Finest Coffee, Crafted with Passion, Since 2003, and continues to operate from the same George Street premises where the Bruces first opened the doors.
