The Dorking Butchery opened on the High Street in 2016, founded by Alex Emmett and Gary Core, both young butchers with hands-on trade experience; Emmett had already been named Young Butcher of the Year in 2012 before setting up on his own. The shop specialises in dry-aged rare breed beef, matured in its own chiller before being cut to order, alongside British-reared lamb, pork and poultry sourced through direct relationships with nearby farmers rather than a central supplier. The business has collected a run of awards since opening, including Outstanding Customer Service and Butcher of the Year titles at the Surrey Life Food & Drink Awards, plus a national Great Taste Award. Counter staff talk customers through cuts and cooking methods, and the shop takes advance orders for whole joints ahead of Sunday roasts and Christmas. Queues form on Saturday mornings.
