Woodlab Distillery

Woodlab Distillery was set up in 2016 by Ulrich Dyer, a chemist with more than thirty years in the pharmaceutical industry, who began distilling in a converted garage at his home in Benburb before moving into a purpose-built distillery at Moy Business Park outside Dungannon. The Symphonia range of gins and rum is made using cold distillation and microwave extraction, techniques Dyer adapted from his pharmaceutical background to draw flavour from botanicals without the heat of conventional stills. Visitors can book the Symphonia Spirits Tour, a Gin School session covering blending and the science of flavour, or a cocktail masterclass, and buy bottles directly from the on-site shop. The investment in the current building and gin school ran to around one hundred and twenty thousand pounds.
