A&I Quality Butchers has traded from Culloden Shopping Centre on Keppoch Road, Inverness, since Alistair Paul and Ian McAllister founded the business in 1997. Unusually for a modern butcher, the shop buys in whole carcasses of beef, lamb and pork and breaks them down on site to its own specification rather than ordering pre-cut joints. Its counter carries handmade sausages, burgers, dry-cure bacon and Ali Paul's steak pie alongside a dedicated gluten-free range, plus locally grown fruit and vegetables, honey and free-range eggs. The shop remains a single, independently owned outlet rather than part of a wider chain, and is listed among Scotland's recognised craft butchers. It continues to serve Inverness and the surrounding Highland communities from its original Culloden premises.
