Derek Coleman opened Cornfield Bakery in 1972, and it is now run by the third generation of the family, siblings Joe and Brandon and their sister Dee, after their father Geoff stepped back. The Thame branch occupies a Grade II listed building on Buttermarket dating from the 1500s, with a bakery counter downstairs selling sourdough, lardy cake and bespoke celebration cakes, and cafe seating upstairs and down. Bread is baked at the family's production unit in Long Crendon and cakes come from a second bakery in Wheatley. The Thame cafe, added in 2005, serves coffee alongside warm pastries, with dog-friendly seating downstairs and a view over Buttermarket from upstairs.
