Coffee Culture Bailgate
Tracey Simpson opened Coffee Culture Bailgate at 82 Bailgate on 19 April 2024, her second location in Lincoln after searching for some time for a spot on the city's uphill side, near the Cathedral. The café has both indoor seating and a courtyard, and works with local suppliers for its food and drink. Simpson took on the premises after a period of renovation and now employs seven staff, drawing trade from residents as well as visitors following the walk between the Cathedral and Newport Arch. Bailgate is lined mostly with independent shops and cafés rather than national chains, and Coffee Culture trades among them rather than apart from them. The courtyard gives the café an outdoor seating option that some neighbouring shops on the street lack. Simpson continues to run the business herself day to day rather than through a manager.

8 Sail Brewery
8 Sail Brewery occupies a former sawmill on Hale Road at Heckington, overlooked by Heckington Windmill, the only surviving eight-sailed windmill in the country. Tony Pygott set up the brewery in 2010, producing its first beer that June, and converted the building's frontage into a Victorian-style bar serving cask ale on handpump. Edward Quigley bought the brewery from Pygott in early 2026 and continues to run it from the same site. A volunteer-run tea room next door opens onto a garden and courtyard used for occasional live music. The bar keeps regular hours across the week, from midday until 8pm Monday to Thursday and Saturday, until 10pm on Friday, and until 7pm on Sunday, with cask beer brewed on the premises rather than bought in from elsewhere.
