George Hughes& Son

George Hughes & Son has traded as a fishmonger on Bruntsfield Place since 1922, filleting fish to order for customers across Bruntsfield, Morningside and Merchiston. George Baxter ran the shop for twenty-five years before retiring in early 2024, when a lease dispute briefly threatened closure; senior staff took over the business, and it now trades as G Hughes Fishmerchants Ltd under director Andrew James Menzies. The counter sells fresh fish and shellfish landed mostly through Scottish suppliers, alongside oysters, smoked salmon and dressed crab prepared on the premises. Staff fillet whole fish while customers wait and offer advice on cooking times and preparation. The shop closes on Sundays and Mondays, opening Tuesday to Saturday mornings, and continues to run alongside its separate online delivery arm, Fresh Fish Daily.
