Mike and Charlotte Billinghurst opened 181 on Bruntsfield Place in 2014 and built it on a single principle — champion the small and the local — which in practice means shelves of Scottish and independent producers, a counter that knows its cheeses, and the kind of curation that got it onto Time Out's list of the city's five best delis. The company register carries the family name plainly; the shop does the daily business of a good neighbourhood deli in a district that expects one. Bruntsfield keeps its independents better than most of Edinburgh; this is a load-bearing example.
