Paul Thacker, a Nottingham-trained chef, opened Hemisphere in Tudor Square in 2024 after several years working across the city's restaurant scene. The menu draws on Modern European, Asian and Australasian influences, built around small sharing plates rather than fixed courses. By day the room serves coffee, pastries and brunch to passing West Bridgford trade; by evening the tables turn over to tapas-style dinner service with a cocktail list to match. Thacker designed the space himself, favouring pale wood and greenery over anything corporate. The kitchen changes its sharing plates regularly rather than running a fixed menu, so regulars tend to order several dishes between two rather than picking a single main. It is a genuinely independent, single-site restaurant rather than part of any group.
