The Herberts were blacksmiths before they were bakers, and the family has baked since the 1920s — five or six generations deep, depending who's counting, with Tom and Henry Herbert carrying the trade onto television as the Fabulous Baker Brothers. The Nailsworth shop, opened by Anna and Tom in 2001, is one of five across Bristol and the Cotswolds fed from the family's Chipping Sodbury bakehouse, which employs around a hundred and seventy people — a family group grown well beyond one counter, B Corp certified, and still nobody's but the Herberts'. Sourdough is the spine; the café pours alongside.
