Noble is Pearson Morris and Saul McConnell's restaurant on Church Road in Holywood — two Deanes alumni who left the Belfast fine-dining world to cook for a small town on their own terms. The name is Morris's grandmother's. The cooking is precise but unfussy, built on what is good and local, and it has held a Michelin Bib Gourmand for the value it puts on the plate. It is the model of a good modern restaurant outside a city: a serious kitchen at a fair price, run by the people whose name is over the door. Holywood books it out; you should book too.
