Ryan Alex Zdrojewski opened Songbird on Dumbarton Road in late 2023 after walking past the empty unit with his father and deciding on the spot to take it on. The Partick cafe pours coffee from Gal Coffee Roasters, a four-person outfit based in Argyll that Zdrojewski found through Instagram and chose for its direct relationships with growers. Regulars know the shop for its Dog Wall of Fame, a growing gallery of customers' pets pinned above the counter, and for a small community library where books are borrowed and returned on trust. The menu goes past standard espresso into specialties such as a naturally processed coffee from China with pineapple and mulled-wine notes, alongside a Kyoto-roasted hojicha iced latte. Trade was slow at first, picking up through the shop's first winter.
