Cave opened on Gloucester Road in March 2020, founded by wine specialist Martin Hagen after six months spent travelling through more than a dozen countries visiting vineyards and small producers. Hagen grew up in Bristol, worked in the wine trade in France and in restaurant and gastropub management in London and the South West before opening his own shop. Cave operates as a wine merchant, bottle shop, deli and bistro in one small unit at 286 Gloucester Road, selling red, white, rosé, fizz, orange, fortified and sweet wines from small-scale producers alongside cheese, charcuterie and coffee, and serving European-style small plates paired with wine by the glass in the evenings. The format is modelled on the caves à manger of Paris, where a bottle shop doubles as a place to eat and drink in. It is closed on Sundays and Mondays.
