H Forman & Son has smoked salmon on Fish Island since 1905, when Harry Forman set up shop after arriving in the East End from Odessa. His great-grandson Lance Forman now runs the business from Stour Road, where fish is still cured using the London Cure method the founder developed. The smokehouse supplies restaurants across the city and ships hampers through its retail arm, Forman & Field. Visitors can book a smokehouse tour to see the curing process, finishing in the on-site gallery restaurant overlooking the Olympic Park. Forman's is one of the last smoked salmon producers left in an East End trade that once supported a dozen rivals.
