Íon Distillery sits on the Drumnakilly Road near Carrickmore, in the Sperrin foothills north-east of Omagh, and describes itself as Tyrone's first craft distillery. The operation makes gin, vodka and rum from scratch on site, drawing water from its own well filtered through the volcanic rock beneath the distillery. Its rums are a particular point of difference: produced from sugar-cane molasses on a purpose-built Caribbean-style copper column still that the distillery says is unique in Ireland and the UK, and sold as Ireland's first range of fully locally made craft rums. The gins run from a London Dry style to a citrus-forward variant, and each spirit is made in small batches in its own dedicated still. Independently owned and run from this single rural site, Íon supplies its bottles through independent drink shops and specialist retailers across Ireland and beyond.
