Dafydd Thomas, a fourth-generation Anglesey farmer, distils on the family farm at Pentraeth — and does something few UK distilleries do: makes all of his alcohol on site from scratch, whisky, gin, rum and vodka, using glacial spring water from the same farm that also bottles it as Anglesey Spring. Established in 2018, it is a genuine field-to-bottle operation, small and family-owned, on an island better known for its beaches than its stills. Visits are best arranged directly.
