Rustico opened in February 2022 at 83 Risbygate Street, Bury St Edmunds, inside a town centre building dating to 1750 that had stood empty for four years before an almost year-long refurbishment. The restaurant is a joint venture between Michele Pagliuca, Marian Grosoiu and Silene Ziglioli. Michele and Marian had previously worked together at Carluccio's and Wagamama in the town, Marian as head chef and Michele in management, before setting out on their own. The single-site restaurant serves fresh pasta made in house, pizza and regional Italian dishes including fresh seafood, alongside a wine list drawn from the regions the owners grew up in. The Grade II listed building's exposed beams and brickwork remain visible throughout the dining room, a legacy of its eighteenth-century origins.
