Seafood at Dawn was opened in January 2020 by Paige Bennett and her business partner Steve Prosser, after Bennett had spent three years working at the restaurant that previously traded from the same East Mersea site. The business later moved along the coast to new premises on Coast Road in West Mersea, trading now as Seafood at Dawn West Mersea Oyster Bar. The kitchen works from a short daily menu built around oysters, crab and whatever has come off the boats that morning, served simply rather than dressed up. Diners can eat in the small dining room or take food away to eat looking out over the Blackwater estuary. The move gave the business more covers than its original site allowed, and its former East Mersea premises has since passed to another local operator.
