St Davids Distillery was founded in 2019 by Neil Walsh, who returned to St Davids after twenty-five years away to start a spirits business rooted in a peninsula his family has lived on for at least eight generations. Working from Sunny Hill, Nine Wells, on the edge of St Davids, the distillery produces Welsh gin and spiced rum flavoured with seaweed and other botanicals gathered along the coast, following a farm-to-fork approach to sourcing. The single-site operation donates a share of proceeds to local and national charities with each sale. Bottles carry the distillery's own branding rather than a contract-distilled label, tying the spirits directly to their production site. Walsh's return to the family's ancestral ground after a career away forms the basis of the distillery's founding story.
